Estoc has more length, shield piercing effect, and a special R2. It may not have as much counter damage as the Rapier, but Dex scaling is hardly ever useful, so the Estoc can get a little more oomph with its higher strength scaling. The Estoc has more synergy with the stone ring too, allowing for it to be better at stunning than the Rapier.I prefer the Estoc's longer range over the Rapier's extra damage (Estoc also looks cooler). The long reach also helps when I feel like attacking from behind a shield at a safer distance. I do use the Rapier off-hand so I'm forced to learn how to parry/ dodge faster, so I may switch over to Rapier again. But for now, I like Estoc the best.

At 40/40 STR/DEX it will do 375, 387 when Refined. At 10/40 it would be like 336 or so when Sharp, +/-1, only tested with 13/40. it depends, if u are playing a balanced char, raw it is, but if you are doing a int build, magic, for dex build, poison, for faith build, lighting, for str build... choose another weapon :P
