Astarion wrecks with 2 crossbows. If you make him a “Thief” at level 3 he can fire the off-hand twice and do tons of damage. Hand Crossbows work great now, and they can be a great option for burning Bonus Actions, since you can do an offhand shot with one. There is even a magic Hand crossbow in the Grymforge.

I would do that, a level in fighter for archery fighting style, shield proficiency so you can have a shield on your melee set and get the AC boost even when you have crossbows out, and second wind (which scales off character level in BG3 rather than fighter level).
