Install hierarchical tags addon then suspend all cards. Then you will see this kind of format for the tags. Suspend all topics that are not relevant to you. For example chapter one of gen chem is covered by Atomic_Structure so you suspend every other card. 6.

As for organization, you need to download this to organize your deck (believe the latest anki update has it built in but you should be fine using your current 2.1 version) Heres the link to the deck as well.
